Peanut Butter Vegetable Chicken Soup

Peanut Butter? In soup? This might seem like an horrendous idea - something that you could only fathom a pregnant woman in her third trimester craving. But according to Allrecipes.com, this recipe has received more than 12,000 bookmarks and 419 rave reviews as well as averaging 4.5 out of 5 stars. The earthy and exotic flavours of this soup are tantalizing to any palette.

As one reviewer states, "I was a little leery about trying out soup that had peanut butter in it, but with all the rave reviews, I decided, why not? I just got done with dinner and the soup was absolutely delicious! I didn't tell my boyfriend about the peanut butter until after he started eating. He couldn't believe it had peanut butter in it! And with all the healthy veggies in it, how could it be anything but great! We've added it to our list of our favorite recipes and I'm already looking forward to serving it again!"

What You Need:

  • 8 cups chicken broth
  • 2 cups diced, cooked chicken meat
  • 1 cup peeled and cubed potatoes
  • 1 cup diced carrots
  • 1 cup diced zucchini
  • 1 cup broccoli florets
  • 1 cup canned whole tomatoes, chopped
  • ½ cup chopped celery
  • ½ cup chopped onion
  • ½ cup chopped green bell pepper
  • 2 cloves garlic, minced
  • ½ cup peanut butter
  • 1 tablespoon chopped fresh parsley
  • Salt to taste
  • Ground Black Pepper to taste

 


What You'll Need To Do:

    1. Take a large stock pot and combine the chicken broth, chicken, potatoes and carrots. Bring the combined ingredients to a boil and then reduce to a slow simmer. Cook together for about 10 minutes, until the vegetables are tender.

    2. Add the zucchini, broccoli, tomatoes, celery, onion, green pepper, and garlic to the soup. Allow to simmer for about 8-10 minutes.

    3. Next add the peanut butter and parsley. Taste and add salt and pepper accordingly (to your taste level). *I personally prefer my soup spicy so I will add 1 teaspoon of cayenne pepper at this point.* Stir until peanut butter is fully blended. Simmer for about 3 minutes longer. Pair with a nice chardonnay.

      Delicious. Made it last weekend. Easy to make. I didn't even measure everything carefully - just threw it together in approximate quantities. Was even tastier warmed up later. I put in orange peppers instead of green and I omitted zucchini because the store was out of them when I did my shopping... I don't think you can wreck this recipe by varying the amounts slightly. I was particularly impressed by the order in which they ask you to add the various vegetables. Doing it this way allowed some vegetables to be cooked more, and others less. Everything came out just right. Will make it again soon! Thank you Senior Living for passing this yummy and easy recipe along.
