Honey-Baked Apples with Fruit and Nuts

Wholesome, comforting, delicious and easy, these are a welcome change from pies and applesauce.

4 servings

Ingredients:
4 apples, such as Gala, Rome Beauties or Cortlands (or your favorite apple)
Slice of lemon
1/2 cup coarsely chopped dried fruit (raisins, figs, prunes, dates, apricots, cherries or candied ginger)
2 tablespoons nuts, coarsely chopped
1 1/2 tablespoons honey
Pinch salt
Pinch cinnamon
4 tablespoons unsalted butter
2/3 cup apple cider (or water)
Heavy cream or vanilla ice cream, for topping (optional)

Directions:
Center a rack in the oven and preheat to 350 degrees. Core the apples and peel down to the halfway mark. Make a very shallow cut around the apples at the point where the peel begins (to keep it from bursting when it expands). Rub the cut parts of the apples with lemon and place them in an ovenproof baking dish that fits them comfortably but snugly.

In a small bowl, mix together the dried fruits, nuts and honey; add the salt and cinnamon. Cut 8 teaspoons of butter and put a teaspoon-chunk inside each apple. Divide the fruit-and-nut mixture among the apples then top with another teaspoon-chunk of butter. Pour in the cider (or water), cut the remaining butter into bits and scatter the bits over the cider. Bake for 50 to 75 minutes, or until the apples are tender, basting every 15 minutes

To make a concentrated sauce, pour the baking juices into a saucepan and boil for a few minutes. Transfer the apples to a serving platter or individual dishes and let cool for about 10 minutes before drizzling with sauce and topping with cream or ice cream.

This recipe brings back memories! My mother prepared it quite often for our dessert. It didn't have nuts in it, but brown sugar and raisins. I also gave it to our young family, but it seems to be forgotten now, A real old-fashioned dessert revived. Thank-you.

I tried this recipe today....Delicious!
I used only raisins for the dried fruit, but went heavy on the nuts with walnuts, slivered almonds & pine nuts. Finished with a dollop of French vanilla ice-cream.
