Baked Summer Peaches

Ingredients

6 fresh peaches, peeled and halved
12 splashes of dark Jamaican rum
12 tablespoons of dark brown sugar
cinnamon to taste

Directions

Preheat oven to 350 degrees F. Place peach halves in a buttered baking dish, cut side up. Top each peach with a splash of rum, a tablespoon of brown sugar and a pinch of cinnamon. Bake for 15 - 20 minutes. Serve warm, topped with vanilla ice cream or crème fraîche.
Serves six.

Note: You may also like to try sprinkling any of the following on the peaches before or after baking: slivered almonds, chopped pecans, finely chopped candied ginger...
