A family favourite for over 35 years, Eileen Tiainen came across this recipe for salmon casserole when her children were young. She says kids are especially fond of it.

Today, Tiainen's daughter has continued the tradition by making the recipe herself, and her son and his wife enjoy it when they com home to visit.

The simple recipe has been passed around to friends and neighbour, and serves well to company, either with steamed vegetables, a garden salad or fresh rolls.

  • 2 cups cooked macaroni
  • 1 can salmon (drained, skin and black skin removed)
  • 1 1/4 cup milk
  • 1 large egg
  • 2 cups grated old cheddar cheese

Mix together and place in a buttered casserole dish. Bake at 350 degrees for about 40 minutes. Makes 3 - 4 servings. Enjoy!
